Nestled amongst the citrus groves of Southern Italy, our producers use traditional techniques to gently cook the tomatoes, developing an extraordinarily intense flavour.

We add crumbled ricotta salata and fried aubergine to make this Italian favourite, named in honour of Sicily’s illustrious son Bellini, composer of the legendary opera Norma.
