Bosco sourdough pizza
Rich with indulgent, earthy flavours, our Bosco is made with truffles foraged from Italy’s woodland regions. Each wood-fired sourdough pizza is topped by our bakers with a creamy ‘bianco’ base, grated Italian hard cheese, grilled mushrooms, fresh chives, and dollops of our truffle and mushroom sauce.

Inspired by the woodland regions of Tuscany and Le Marche where wild truffles — and intrepid truffle hunters — are found in abundance, our Bosco pizza (Bosco means ‘forest’ in Inglese) is a celebration of the earthy, aromatic flavours of the Italian countryside.
Made from a ‘mother dough’ starter and slow-proved for 24 hours, our bakers wood-fire each pizza base at 400C on lava stone from Mount Etna, until the crusts rise, blister and char.
Next, we add our creamy bianco sauce, made from whole-roasted garlic, cream and lemon juice — before hand-topping with grilled Portobello mushrooms, fresh chives, a smattering of Italian stagionato cheese, and dollops of our truffle and mushroom sauce.
As the pizza cooks, the sauce will slowly melt into the pizza’s creamy base — infusing every bite with the deep flavour of one of Italy’s most prized ingredients.Learn More
