Gently grilled peppers, aubergines and courgettes top our Ortolana Pizza, loosely translated to ‘Garden Pizza’ in Inglese, it is a showcase of the best fresh Italian produce.
As with any great pizza, the story starts with the dough. Made from a ‘mother dough’ starter and slow-proved for 24 hours, our bakers wood-fire every base at 400°C on lava stone from Mount Etna. In the heat, the crusts rise, blister and char in authentic pizzeria fashion.
Then it’s time for our bakers to top the pizza by hand – with a classic tomato sauce, grilled vegetables marinated with parsley, thyme and chilli, Tropea I.G.P. red onions, Taggiasca olives, and a creamy mascarpone sauce.Learn More
